Vegetarian Greek Rice Bowl

Time Investment: 30 Minutes Beginning to End

Ingredients (Tzatziki)
  • 1 teaspoon dill
  • 1 cucumber, seeded & grated (roughly 1 cup)
  • 4 Cloves Garlic, minced
  • 1 Tablespoon lemon juice
  • 1 Tablespoon olive oil
  • 1 Cup plain greek yogurt
  • Salt & Pepper to taste
Rice Bowl Ingredients
  • 1 Cup rice
  • 3 Cups baby spinach
  • 1 Cup Cherry tomatoes, halves
  • 1 Chopped Bell Pepper
  • 1/2 Chopped Cucumber
  • 1 Cup Tzatziki
Ingredients (Red Wine Vinaigrette)
  • 1 Tablespoon red wine vinegar
  • 1 Tablespoon lemon juice
  • 3 Tablespoons olive oil
  • 1/2 teaspoon Italian seasoning
  • Salt & Pepper
Directions (Tzatziki)
  • ….Mix it all together & eat it.
Directions (Vinaigrette)
  • Mix it all together/shake in a jar (what I did)
Directions (Rice Bowl)
  • Cook rice according to package instructions (I always soak rice for 15-30 minutes before I cook and then rinse – it makes WAY better rice)
  • Top rice with chopped veggies, vinaigrette & serve with tzatziki!
