Lemongrass Chicken Noodle Bowl

Time Investment: 30 Minutes Beginning to End (Not including marinade time)

Ingredients (Chicken Marinade)
  • 1lb Boneless Skinless Chicken Thighs
  • 2-3 Lemongrass stalks, finely sliced (white part only)
  • 3 Cloves Garlic, finely minced
  • 3 Red Chilis
  • 4 Tablespoons Olive Oil
  • 2 Tablespoons Fish Sauce
  • 2 Teaspoons Sugar
  • 1 Teaspoon Sea Salt
*Combine All & Marinate Chicken 3 Hours
Ingredients (Vietnamese Sauce)
  • 2 Tablespoons Sugar
  • 2 Limes, Juiced
  • 2 Tablespoons Fish Sauce
  • 4-6 Tablespoons Water
  • 1 Clove Garlic, Minced
  • 1 Red Chili, Minced or 1 Tablespoon Chili Sauce
Ingredients (Noodle Bowl)
  • 1 Package Vermicelli Noodles – Cook according to package instructions
  • 1 Cucumber, sliced thin
  • 1 Large Carrot, Shredded
  • (You can include any veggies you want it’s a very versatile recipe!)
Directions
  • Grill Chicken ~5 minutes per side (until cooked through)
  • Whisk together sauce ingredients
  • Top Vermicelli noodles with veggies, sauce & chicken!
  • You can top with herbs like chopped mint, basil or cilantro (I used sliced fresh basil)

Mom Pro Tip: This is a SUPER easy recipe to make – I marinated the chicken in the morning so that it was ready by dinnertime. The rest of the noodle bowl assembly is very quick and easy.

For The Tiny Humans: We gave them some of the sliced veggies & pieces of the chicken thighs that weren’t too spicy from the marinade and they LOVED.
